While every animal is different in size, shape, and weight, most of our cattle fall within a weight range. Please note that variances are to be expected. The figures below are for space and budget planning purposes.
The weight of the animal before processing.
This refers to the weight of the animal as it hangs in the butcher's cooler. This is the weight once the head, hide, feet, and organs are removed and the carcass is dressed. Almost all butchers base the processing fees on the amount of hanging weight. It is the price the butcher gets to cut, wrap and freeze the meat for the consumer. Hanging weight usually averages 60% of the live weight.
A carcass can vary greatly but a good average for this yield is 60% and refers to the cut, packaging and labeling of meat that you will put in your freezer. This yield also depends on the types of cuts you tell your butcher that you want. Grass fed beef will usually have a higher percentage yield than grain fed beef since there is excess fat in grain fed beef that has to be trimmed away.
Customers are responsible for the cost of butchering their beef. This allows the most flexibility for each family. Hanging weight excludes all organs, tail, and tongue. Bones and tallow are included in the hanging weight and can be requested. You will work with a local butcher who will customize your cuts based on your preferences. The cost of butchering your beef includes cutting and packaging and averages $1.45/lb. (subject to change)
You will need about three cubic feet of freezer space for every 100 lbs. of meat. Chest freezers will minimize the amount of cold air let out when you open the lid. It's best to use one with no defrost cycle. The thaw and freeze cycles of a frost-free freezer will cause freezer burn of the meat.
DEPOSITS: A NON-REFUNDABLE deposit of $500 for half beef or $1000 for a whole beef is required to be placed on the waiting list. You will be given an estimated slaughter date and contact info for the butcher to begin determining your cut list preferences.
